Quick-cooking rice processes for Philippine rice cultivars

Annotation

Six Philippine rice cultivars are used to develop quick-cooking rice products. Dehydrated samples produced using freeze-drying and combination processes are shown to be susceptible to disintegration. Dehydration by boiling in water for five minutes is recommended.
